Reading

Read and translate the text. Write down dishes which are made from semiproducts.

                Semiproducts are used in the manufacture of various meat and cooking products. From the liver, prepare the second dishes, fillings for pies, it serves as a raw material for the production of sausages and pastes (паштет).

                Kidneys are used for the first and second dishes, delicious canned food; tongues - for other, flooded dishes (заливні страви), for the production of smoked (копчений) meat, canned goods and sausage products. The heart is suitable for other dishes, pastes, liver sausages and canned food.

The lungs are added to minced meat with the production of low grades of liver sausages along with other by-products.

                The legs, ears are used as additives (добавки) in the manufacture of jellies, liver sausages. From meat-bone tails prepare broths (бульйон) and canned food

How to cook?
Process
  1. Slice steak into 1/4″ thick piece, against the grain and season with salt and pepper.
  2. Toss steak pieces in cornstarch until fully and evenly coated. Set aside.
  3. Heat a skillet over medium-high heat and add some oil. Sauté the ginger and garlic until fragrant.
  4. Add soy sauce, water and sugar and bring to a boil until sugar dissolves. Pour sauce into a measuring cup and set aside.
  5. Place skillet back over heat and add more oil. Add steak and sear until evenly browned on both sides.
  6. Pour sauce back into skillet and stir together with meat. Allow sauce to thicken.
  7. Add green onion and continue to simmer until sauce is thick enough to coat the back of a wooden spoon.
  8. Serve Mongolian beef over steamed rice.

Pomegranate Roasted Chicken
Ingredients
  • 1 cup pomegranate juice
  • 3-pound whole chicken
  • Extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1 cup low-sodium chicken stock
  • 1 tablespoon fresh thyme
  • 1 cup pomegranate seeds
Directions
Step 1
Heat pomegranate juice in a small saucepan over medium heat until reduced to 1/4 cup. Set aside. Meanwhile, let the chicken come to room temperature for about 30 minutes. Heat oven to 450 degrees.
Step 2
Brush chicken with oil and season with salt and pepper. Tie legs and transfer to a large ovenproof skillet.
Step 3
Roast chicken, turning once, until golden and cooked through, about 50 minutes. Transfer to a serving dish and brush with reduced pomegranate juice; let stand 10 minutes. Deglaze skillet over medium heat with stock, scraping up brown bits with a wooden spoon. Cook until reduced by half. Strain fat. Add thyme and pomegranate seeds. This week, I discovered excellent pastries at two local bakeries. Dana-Michelle's Pastry Shop was my first stop. The shop has several specialty custards that they use in their tasty croissants and choux pastries. Everything I tasted at Dana-Michelle's was superb, but I especially recommend the raspberry Danish. This heavenly puff pastry has a delicate, light, flaky texture. It is topped with custard and fresh berries. 
Sugarloaf Bakery has a window from the seating area into the kitchen. Get there early and watch the bakers pound and roll the dough before they bake it. I fell in love with the shortcrust pastry. It is the foundation of Sugarloafs many delicious pies and tarts. I was not as impressed with the doughnuts. They seemed crisp, so I suspect they were overcooked. Instead, try one of their creative phyllo pastries. They might be filled with nuts, cream cheese, or even ham!

Chewy chocolate cookies
1 Heat the oven to 350 degrees.
2 Stir the dry ingredients together and set the mixture aside.
3 Beat the eggs and butter until smooth. Then let the baking soda dissolve in hot water and add it
to the mixture. Combine the wet and dry mixtures.
4 Use butter or vegetable oil to grease the sheet pan. Then drop one-inch balls of dough onto the sheet
pan, two to three inches apart.
5 Bake the cookies for 12-15 minutes or until they turn golden-brown. Let them cool for at least five
minutes before you serve.
